Saltine Chocolate Toffee

Everyone has a favorite Christmas treat that is super easy to make in big batches for crowds or to package as gifts.  Some love puppy chow, others love cookies, but I am a huge toffee fan.  I love the buttery taste of toffee.  Toffee is very easy to make for a large crowd, and this recipe only calls for 5 ingredients.  This recipe allows also you to customize it in any way to add your favorite toppings or candy bars.  I love making this toffee around Christmas time and leaving it out to enjoy throughout the week for when I am craving a sweet little treat.

Line a sheet tray with aluminum foil and be sure that every square inch of the tray is covered with foil.  You do not want to have to clean up the hardened toffee off of your sheet tray.  The aluminum foil makes for a very easy cleanup.  🙂

Place 40-50 crackers in rows on your tray.  The crackers should be touching each other and there should be no gaps in between each cracker.  Set the tray aside and preheat your oven to 350 degrees.

Heat a small saucepan on low/medium heat and melt the butter and brown sugar.  Once the butter melts, allow the mixture to simmer for 5 minutes with very small bubbles.  It may take 8-10 minutes to achieve the first the bubbles, but it is very important that you heat the mixture on a somewhat low setting so that it does not burn.  There is nothing worse than the taste of blackened and burnt sugar in your toffee.

Once you have allowed the mixture to simmer with small bubbles for 5 minutes, take it off of the heat and immediately pour it over the crackers.  It will be a rich golden color and a very smooth texture.

Spread the melted butter and sugar over the tops of the crackers.  Some of the crackers may fall out of place, so you will want to quickly move the crackers back into their place.  You want to be sure that the butter holds all of the crackers in place so that they shift as little as possible in the oven.

Place the tray of crackers carefully in the oven and bake them for 5 minutes.  The butter will begin to bubble on the crackers and all of the crackers should be stuck together firmly. They may move a little bit apart from each other again, so be sure to push them together with a spatula.

While the crackers are still piping hot out of the oven, sprinkle the chocolate chips on top of the crackers to allow them to melt.

Spread the melting chocolate on top of the crackers.  I used mini chocolate chips for this recipe because it is what I had on hand at the time, but you may certainly use white or dark chocolate.

Once your chocolate is melted and spread evenly over the crackers, add your favorite crumbled cookie, pieces of candy bar, or chopped nuts to the tops of the crackers.  I decided to do half mint chocolate and half sea salt for this recipe.

As the chocolate is still warm, sprinkle your favorite ingredients on top.  Once you have added your toppings, put the entire tray of toffee in the refrigerator.  Allow the toffee to cool in the fridge for 1-2 hours.

Once the toffee is completely chilled, cut into pieces and remove all of the aluminum foil from underneath.  The toffee is fairly easy to cut into pieces with a very sharp knife, but I find it easiest to break pieces off with your hands.  I also prefer the very abstract look of the toffee back compared to the straight lines of perfectly square cut toffee.

My absolute favorite addition to the toffee is sea salt.  I love the added flavor of saltiness from the sea salt that the crackers do not create on their own.  The simpleness of the crackers, chocolate, toffee and salt is perfection. IMG_0259.jpg

The mint chocolate toffee is so delicious as well.  The mint chocolate chips add a little bit of a savory flavor  to the sweet toffee.

I have experimented using Heath bars, Butterfinger pieces, Reese’s pieces, Oreos, crumbled walnuts, chopped pecans, and many other toppings.  I must say that anything will taste amazing on these toffee bars.

I packed a few batches of the toffee in holiday tins and gave them to neighbors and coworkers.  Everyone loves this stuff!

INGREDIENTS:

40-50 saltine crackers

2 sticks butter

1 cup brown sugar

1 1/2 cups chocolate chips

1 cup favorite topping (nuts, candy bar pieces, dried fruit, etc.)
