Happy Friday, everyone! I hope your week has blown by faster than mine has. Something about this week just dragged along. I have been a bit under the weather the past week. Hopefully I am able to continue to fight it off and be fully-charged for the weekend!
When I originally saw Brittany from one of my favorite blogs post this recipe, I knew that I had to try it. I am a sucker for any sort of dessert with chocolate, but chocolate and avocado?! Something that combines two of my favorite foods had to be good…
Her recipe combines only 4 ingredients! It can be thrown together in a flash for a get-together with friends, or in my case on a Sunday afternoon to satisfy a serious chocolate craving.
Combine the avocado in a blender, food processor, or with a fork until it is nice & smooth and creamy. I used my NutriBullet and it worked pretty well.
Melt the chocolate in a microwave safe bowl for 20 seconds at a time stirring it thoroughly in between until it is fully melted.
Pour the melted chocolate into the blended avocado, and blend the mixture until smooth. It may take a few minutes, a few stops, and a few scrapes to achieve the perfect consistency.
Once the chocolate and avocado is mixed evenly throughout, pour it into a small bowl. Place the bowl in your fridge for at least 2 hours. I refrigerated mine for 4 and it came out perfect.
You will notice that when you take the truffle mixture out of the fridge, it will have significantly firmed up.
Use a 1 inch cookie scoop or a spoon to form small balls for the truffles.
Roll the balls in the palms of your hand, and then either leave as-is, or roll the truffles around in cocoa powder.
If you do not want to roll the balls in cocoa powder, sprinkle a tiny bit of sea-salt on top of each one.
The truffles are so incredibly smooth and luscious! The cool and creamy texture hits the spot and will satisfy your chocolate craving perfectly.
Be sure to chill the truffles in the fridge if you do not plan to immediately serve them. They are extra delicious when they are freezing cold out of the fridge!
I had TJ try one and he could not tell that there was ANY avocado in them. When I told him the ingredients, he almost didn’t believe me. I promise that you will love these truffles!
1 1/2 medium ripe avocados
1 cup chocolate chips/baking chocolate
2 tsp. sea salt
1/2 cup cocoa powder
